ETHIOPIA - BOOKKISA (WASHED)

The Sawana drying station sits high in the hills of Shakiso in Guji, a young site established in 2022 to give Bookkisa and Shoondhisa growers their own dedicated home. Around 30 smallholder farmers now bring organically grown cherries here, most of them tending small garden plots where coffee grows alongside everyday subsistence crops. Ethiopian farms may average 2.5 hectares, but lower planting density and semi forested systems mean fewer trees and famously low yields, which makes this coffee feel especially precious. Expect a clean, juicy cup with a rounded body and a clear sense of place from Guji’s highland forests.
