Thailand has one of the most sophisticated and innovative specialty coffee industries in the world. With high local demand for specialty coffee, coupled with import tariffs on foreign coffees, the industry has had to focus on getting the very best from their own backyard. Watchara Yawirach leads a coffee cooperative in Mae Chedi, Chiang Rai, comprised of exceptional coffee farmers who borrow tea fermentation techniques and adapt them for coffee production. This SL28/Catimor hybrid is ridiculously sweet, rich, and boozy and represents one of the finest naturally processed coffees from Thailand this season. Note: Less than 5% of Thailand’s total coffee production leaves the country, making Thai coffees exceptionally rare.
