ETHIOPIA - GENJI CHALLA LOT 1 (WASHED)

This coffee was grown in the Genji Challa Village, Ethiopia, known for its traceability. The well ripened coffee cherries are pulped within 12 hours from time of picking. Immediately after pulping, the coffee is soaked in water for 12 hours, then washed with clean water to prevent over-fermentation. Finally, the coffee is soaked for another 12 hours for the final stage of fermentation. The coffee is then fully washed with clean water and dried under shade, followed by drying under sun on raised African coffee drying beds resulting in a sweet apricot, honey and tea like cup.
