ETHIOPIA - SHOONDHISA (NATURAL)

The Suke drying station sits high in the hills of Shakiso in Guji, a foundational site for Sookoo Coffee since 2017. For years it was the heart of the operation, supporting growers long before the newer Sawana and Weessi sites were built. Around 35 smallholder farmers now bring organically grown cherries here to create Shoondhisa. Most tend tiny, mixed garden plots rather than large estates, a hallmark of Ethiopian coffee farming. Lower planting density and semi forested systems keep yields modest, but they also contribute to the clarity and sweetness that define this lot. Expect a clean, balanced cup with gentle fruit and a soft, lingering finish.
