GUATEMALA - CEDROS DE PALMIRA (WASHED)
This coffee is grown by the Palacios family in Huehuetenango, which is a small, remote region in Guatemala. It has the highest altitude and driest climate in the country. Their coffee undergoes a washed process where it is first fermented for 30 hours and dried on raised beds for 2 days in the sun, then a further 18 days in a greenhouse. This process is adjusted carefully depending on the weather conditions. This results in a clean, complex flavour with notes of citrus fruits, green apple and cinnamon.
