This coffee is grown by Jose Joel Martinez Amaya. His father Alejandrino Martinez taught him everything he needed to know to be a successful coffee farmer. Things were never easy but he manages to buy every single inch of his 6
mz farm. Jose is very thankful for his wife, Maria Guadalupe Gonzales who has been key to improve the quality and growth of the farm. Like many others in Tres Cruces, Jose Joel Martinez depulp the coffee the day he harvested, then he ferments the coffee for 48 hours making sure the temperature never rises to avoid unpleasant odors and taste. He uses a solar dryer and patio to dry the coffee which usually takes 14 to 20 days.
