At Ratnagiri Estate in Chikmagalur, Ashok and Divya Patre are redefining Indian specialty coffee through bold experiments in fermentation, much like in beer or wine-making. Working alongside a PhD microbiologist and a renowned food scientist, Ashok has developed carefully controlled methods that shape the character of each lot. DH-13 is one such example, created through the farm’s innovative Hydro Honey process, where 80% of the cherries are guided through microbial fermentation before being mixed with 20% freshly harvested fruit. The blend is then depulped without water and dried on raised beds. Produced in small quantities, the result is strikingly clean, with delicate flavours wrapped in rounded sweetness.
