INDIA - RATNAGIRI RW1 (ANAEROBIC WASHED)
Nestled in the Western Ghats of Southern India, Ratnagiri Estate coexists peacefully as part of a tiger reserve. Since acquiring the land in 1927, the Patre family has held a strong vision of sustainable coffee cultivation. Today the estate remains very much a jungle, and third generation farmer Ashok continues to play his role in protecting and preserving the biodiversity of the region. For this lot, coffee cherries were first pulped, then fermented without oxygen for 90 hours before being soaked in clean water for 24 hours. Following, the coffee was slowly dried on raised beds for 27 days. This extended fermentation has given the coffee a rich and sticky-sweet flavour reminding us of nougat and cherry.
