INDIA - RIVERDALE ESTATE (PINEAPPLE PROCESS)

This coffee is grown in Shevaroys Hills in India. The cherries are selected carefully and handpicked. They are then washed three times to remove the coffee cherry from the bean. Green beans then undergo a unique process where they are kept in air-tight bags along with well ripened pineapples for a period of 72 hours. During this time, the temperature and PH levels are closely monitored to ensure consistency among all lots. The beans are then dried on raised beds for 25-30 days. This unique process results in a rich, syrupy mouthfeel with notes of rum, raisin and orange.
