LIMITED RELEASE - COLOMBIA EL DIVISO (NATURAL)

Jose Uribe Lasso produces exceptional coffees on his farm which has ideal growing conditions and nutrient-rich soil. This coffee goes through a complex natural process where multiple steps of fermentation are carefully conducted. Ripe cherries are sorted and rested in tubs for 18 hours. Next they are aerobically fermented in bags for 70 hours. This is followed by an anaerobic fermentation for 30 hours. Finally they are submerged in water at a controlled temperature for 18 hours, then dried on raised beds. This provides a high quality cup with rich notes of peach, lime and wine.
