TIMOR LESTE - ERMERA (WASHED)

In Timor-Leste’s rugged Ermera region, smallholder farmers cultivate coffee on steep, volcanic slopes at 1,480–1,600 metres. Híbrido de Timor—a variety born of Arabica’s elegance and Robusta’s strength—thrives in the cool mountain air. At Orijem’s Centru Kafe, Timor’s first environmentally sustainable wet mill, cherries are floated, hand-sorted, and pulped before 24–40 hours of controlled fermentation. The washed beans are then dried slowly on raised beds, preserving clarity and nuance. The result is a clean, refined cup with gentle acidity, soft fruit notes, and a lingering sweetness—an expressive reflection of Timor’s coffee heritage, offering both character and balance.
