In the state of Chiapas, you'll find Mexico's oldest and largest coffee-producing regions, with some farms looking back on over 100 years of coffee history. This lot is decaffeinated using the Mountain Water Process, which relies on pure glacier-fed water from Pico de Orizaba rather than chemical solvents. By gently removing caffeine while preserving the coffee's natural sugars and structure, the process allows the cup to retain much of its original sweetness and character. Specialty decaf has come a long way in recent years, and coffees like this prove it. Expect a clean, full-flavoured cup with comforting sweetness, soft acidity, and a smooth finish.
