COLOMBIA - JOHAN VERGARA (WASHED ANAEROBIC)
This coffee was grown by Johan Vergara at his farm, Las Flores. Coffee cherries are carefully handpicked in order to harvest only the ripest cherries. Selected cherries are then left to ferment for 40 hours in an anaerobic environment. After this fermentation process the cherries are pulped and gently washed of remaining mucilage, then sundried. This provides a unique mouthfeel and lots of sweetness.
