ECUADOR - MARIO JOSE HERVAS (WASHED)




Mario Jose Hervas is a pioneer of growing specialty coffee in Ecuador. Initially beginning as a hobby, his love and passion for coffee grew and for the past six years he has owned and operated his farm ‘Finca El Meridiano’. Throughout this time he has refined his fermentation and drying processes to ensure high quality harvests. Mario uses a washed process for his beans with a traditional fermentation period of 18-20 hours. This results in a well rounded clean flavour.
