ETHIOPIA - CHALBESA (WASHED)
This coffee is produced in the Yirgacheffe region in Ethiopia by a number of smallholder farmers. Their harvests are handpicked and transported directly to nearby processing stations where they are sorted by ripeness. The ripened cherries are pulped, then fermented by soaking the cherries for 48 hours. Once all mucilage is removed, a routine drying process is carried out. This entails 10 days of drying on raised beds whilst ensuring they are protected from the sun during the hottest part of the day. This provides a sweet, clean mouthfeel, with notes of apricot, date and earl grey.
