ETHIOPIA - GIRMA SINTAYEHU (WASHED)
This coffee comes from a collection of smallholder farmers in Kochere, Ethiopia. Once picked and sorted, ripened coffee cherries are taken to the locally built processing machine where they undergo a washed process. Here they are pulped, then soaked under water for 48 hours which provides an environment for fermentation to take place. Remaining parchment is then removed from the beans with clean water. Lastly the beans are dried on raised beds for 10 days so desired moisture levels are reached. During this time routine steps are taken each day to ensure the beans aren’t scorched in the sun. This process provides a clean and sweet mouthfeel.
