ETHIOPIA - GUTU BIRRE (NATURAL)

This coffee comes from a single farm in the Yirgacheffe region in Ethiopia owned by Gutu Birre and his father. Coffee produced in this region undergoes a natural process where ripened cherries are sorted and placed on raised beds. The cherries remain on these beds in the sun for 18 - 21 days. To maintain uniform drying among the beans, cherries are rotated 6 times per day and covered at night to minimise moisture. On the 15th day of drying, moisture content is closely monitored until desired levels are reached.
