INDIA - RIVERDALE ESTATE (CARBONIC MACERATION)

India’s Riverdale Estate is situated in Shevaroys Hills in idyllic coffee producing conditions. Great care is taken in each phase of producing excellent coffees. Coffee cherries are carefully selected by the head picker based on their measured sugar content to ensure they are properly ripened. Cherries are then placed in an oxygen free tank where they ferment, this process is called Carbonic Maceration. Mandarin skins are also added to the tanks to enhance acidity and complexity. Once complete a careful drying phase is performed where cherries are placed on raised beds in full sun for 4-6 days then transferred to part shade for a further 20-25 days.
