MBOHANG - INDONESIA (ANAEROBIC NATURAL)
This Indonesian coffee has been sourced from multiple farms and villages in the mountainous region of East Nusa Tenggara and processed in the town of Ruteng by Tuang Coffee. Upon arrival at the processing mill, the cherries are placed in water to seperate floaters from the rest of the cherries. Large water tanks are used to ferment the cherries for a few days until the PH has reached a desirable level. This is followed by a natural drying method where cherries are placed on raised beds and routinely turned and raked several times a day for up to 6 weeks. Once this process is complete the coffee is then hulled and sorted according to size, colour and weight. You can expect rich flavours of blackberry, guava and grape when drinking this coffee.
