PERU - JOSE EUDIN PEREZ (WASHED)



Jose Eudin Perez took responsibility for running his parents coffee farm in Cajamarca, Peru in 2019. Since then he has persevered in making improvements in the quality of the coffee he produces with the help of his friends in nearby farms. Well ripened cherries are picked and then go through a washed process where cherries are pulped and dried. Afterwards they are stored in airtight plastic bags to ferment for 36-40 hours, followed by a drying phase on patios for 15 days. This gives the coffee a clean and balanced mouthfeel with flavours of butterscotch, raisin and cacao.
