Grown by smallholders and processed at Centru Kafe - equipped with wastewater treatment, biogas harvesting, and soon, solar power - this washed Híbrido de Timor delivers a rich, comforting profile. Cherries are floated, hand-sorted, and pulped before 24–40 hours of fermentation, then dried on raised beds to develop depth and sweetness.
