Now being widely produced in Colombia for it's consistent high yield and dense planting capacity, the Caturra varietal is inherently quite high in acid content. However, unlike the rest of the Bourbon family, Caturra is also notably floral and delicate - much like the highly acclaimed Gesha varietal. The high-acid floral characteristics when processed with care and roasted delicately - can provide us with a truly delightful cup thats bright, clean and juicy.

This lot was produced by Gustavo Silva in Planadas, Tolima. At his farm, nestled at a crisp altitude of 1,718 masl, Gustavo and his family grow a variety of coffees, including Caturra, V. Colombia, and F8. As is most common in Colombia, Gustavo uses the washed process for his lots; however, his process involves a slight variation. Interestingly, when drying his coffee, he prefers to use raised timber beds inside a marquesina—a greenhouse-like structure typically used for drying parchment. You can expect a lighter-bodied cup that is sweet with a crisp finish, reminding us of lemon myrtle.
