This one has been with us for a while. Francisco Fim has quietly carried a lot of weight in our Double Up blend, and from the start it stood out for its body, richness, and balance. Releasing it on its own feels like the right next step, a chance to show the structure and depth we’ve come to appreciate in coffees from Espírito Santo, with notes of mudcake and almond butter, and a profile that feels comforting without being heavy.

Grown in the lush hills of Castelo, this lot reflects the long journey of the Fim family, who settled here after migrating from Italy in the 1950s, drawn by rich soils and abundant water. Today, Davi, Nei, and Zeca (Francisco) Fim carry that legacy forward across small, closely connected family plots. Espírito Santo stands apart within Brazil, where mountainous terrain and cooler growing conditions help produce coffees with a little more structure and character than you might expect from Brazil. It leans into a deeper, more indulgent profile, with a smooth, nutty sweetness and a gentle lift that keeps things balanced. Comforting, familiar, and easy to enjoy.
